Overlooking the sea, the fishermen and la Bonne Mère, Miramar is ideally located on the Vieux-Port of Marseille. It has become a hot spot of gastronomy in the city.
One enjoys a fresh and sunny cooking, the chef favouring new tastes of various mediterranean influences, as well as Provence and local homemade recipes, fish from the Mediterranée and the Vieux-Port fishmarket such as Ciccarelli family gurnards, brousse du Rove (ewe or goat cheese, oil from les Mées, wines from Cassis, Bandol, …) His bouillabaisse, the « true Bouillabaisse » is what attracts the customers. It is one of the best in the Phocean city; its recipe has remained unchanged through time.
LE CHEF
Christian BUFFA
Christian Buffa is a Marseillais of Italian and Corsican origins. He spends his youth close to the Vieux-Port : the Moulins day-care center, the Evêché primary school, the Montée des Accoules. Then crosses the Cannebière and gets his high-school baccalauréat C at Lycée Thiers. He pursues his studies, with a prepa HEC in Luminy then a DUT in Business and Administration Management at St Jérôme.

La Bouillabaisse
Standardizing cooking is impossible. Indeed, cooking is an art, it is the chef’s dexterity that makes the success of a recipe.
Yet, the Bouillabaisse, the ultimate Marseille specialty, demands very specific ingredients if one wants to respect the tradition and not cheat the customer. The object of this chart is to detail the elements of a quality Bouillabaisse, while respecting the art of the professional, with a view to promoting this regional dish among customers.
